How many parts there are?
I watched both 1993 and 2000 OVAs and then the 2012 series. After that I dropped the series (not because it was bad, but because was kinda tired of shounen at that time).
Is there anything worth after the 2012?

Part 8 is still ongoing in the manga.

Stardust Crusaders adapts Part 3, like the OVAs did. But it is MUCH more faithful to the source material, however this comes at the cost of slow pacing and the nosedive in animation quality towards the end.
Because SDC is a 1:1 adaptation, it has many of the flaws of the source material.
Part one (Episodes 1-9) is more of prologue to the rest of the series.
