So ultimately the self-insertion itch that LNs scratch goes from "my cute little sister likes the same things I do and doesn't think I'm a freak" to "I'm a gamer and I can get tons of pussy and save the day" to "I just want to die, but wake up in a world from one of my vidja gaymes where I know how everything works and I can quickly become overpowered and strong and also have a harem."
In the end, it all boils to Japan having such a shit society, that they just want to live in a new one.

depends on the person, but usually it's just the potential for the most realised 'world' one can step into, filled with like minded players. Inspiring a sense of wanderlust and camaraderie, some trading, some action... it's ideally a mixed bag of everything great about gaming.

If you've ever played tabletop, you'll realize you NEED strong AI and even stronger procedural generation if you ever want to translate that kind of freedom into videogame format.
Current procedural generation isn't even close.
If the player ever decide "fuck this, I'm doing something else" as players are wont to do, you now have to plan all sorts of shit and chuck out all your previous planning.
Humans have enough trouble with that and they only have to think about general consequences and effects, not the environment that would have to be represented in a visual format.
There is a very long way to go before immersive virtual worlds can be represented digitally.

Transworld (reincarnation, displacement, game-incarnation) stories are not even really new.
It's just an easy way to set up a setting. Character interaction can be padded with dialogue about the difference between the MC's world and the one he/she now in.
