I think its a matter of the satellite cannon being a fucking terrifying weapon and a symbol of the war that fucked everything up in the setting. It can wipe out entire armies in a single shot, destroy the landscape, and shoot down colonies. He feared the weapon, not the killing. His whole development with it and the DX was learning when to use it and how to use it responsibly.

That's more of a fault of the working conditions of the time. Not even he nor Tomino liked the anime's overall quality themselves in retrospect.

Tbf, I'd chalk that more up to the designs being products of their era.
It also didn't help that Yas got his upbringing at Mushi Pro, who was mostly doing a shitload of stuff for Rankin-Bass in their last years; an element that definitely shows in some of 0079's more "goofier" designs

I don't think they're that bad. To me they're not that far off from the average human neck, but when it comes to cases like Ghiren I can still see where you're coming from.
To create drama
A fight needs to have more going on in it so it is more memorable. A simple way to make this always present is the MC doesn't want to do the fight, has his own goals or wants to try and save someone in the fight. This also gives the characters something to talk about/see how they react to after a battle.
