For the former I could imagine something along the lines ofHuman/ghoul farming plants, were both are raised as chattle. With humans fed to ghouls whereupon the latter are harvested for ghoul juice.
For the latter I'm guessing V is the ultimate big bad, as it would be poor writing to introduce something new at this point in the story. Their purpose isn't very understood yet, though.
So the dissection of Shirazu by Kanou will be a very important point in :re.
Of the many possibilities moving forward, the more obvious ones have to do with Kanou making lots of powerful Half-Ghoul like things, and the balance of power in the TG universe being different from here on.
Another possibility that would be interesting would be if Kanou can make maybe one or two interesting specimens before he is found and stopped by the CCG (Urie revenge flag etc.).
