When he was a child soldier, the only weapons available for him were adult-sized swords. To shota Guts, these were comparable to the greatswords he later used. So as a child he was always accustomed to using a weapon larger than himself and he stuck with that through adulthood. Eventually he got so ridiculously strong that he was able to swing the Dragon Slayer around, and he is attached to the weapon to the point where he won't use any other arms unless he absolutely has to.
