I'm not the average Eva defender but turning into "orange juice" here is the trigger to further character development, not the fact in itself.
Eva's plot isn't clever or anything, it's just mecha centered around character study and analysis. If you dislike the characters (which I do), you won't like it at all. The symbolism is shit. It has a nice direction, good performances, and is overall a good anime. People might praise Eva for its complex plot but it's nothing more than a mess of things added on top of each other as trigger for the character interactions (I won't say "development" because the characters unravel totally in the second half).
