How new are you to fansubbing?
A lot of shows don't get onto CR because of mature ratings or the companies are not contracted with CR. Cruncyhyroll is one of the most content restricted streaming sites around for anime.

Well, to an extent, OP is right. In fact, there is plenty of evidence that fansubbing is dying.
The fact is, most of the best fansubbers out there actually work for CR now. Simulcast offers the same quality as fansubs, but are always faster. Not to mention that the only thing fansubbers have ever done is add retarded karaoke and memes.
There's a reason why everything gets their anime from Horriblesubs aka CR rips nowadays. There's practically no reason why anyone shouldn't simulcast in this day and age.

Not true, anyone who used to fansub that is considered "good" amongst fansubbers refuse to work for CR for the simple fact that they underpay their employees. Simulcast translators are given a script directly from the japanese studio, which they can translate from.
Traditional fansubbers had to rely on their ears and listen to the audio.
That's mainly the biggest difference.
The script thing is more safe, but it can also lead to laziness/overconfidence.
If you someday only translate from script, without seeing the context in the video, you could get very bad results.
Ideally you would only use the scripts for QC purposes.

It's been over 4 months since they've even mentioned it and I refuse to watch the godawful Funi version.
CR simply can't be competed with in speed because they have the scripts before the public. Thus speedsubbers have to rely on some other reason to exist, for example higher broadcast quality, meme, overlocalized or more literal Japanese translations than CR, or karaoke. Given that so few people care about those things enough to wait a few days when the CR rip is staring them in the face and everyone on /a/'s already talking about it, it's not hard to see why fan speedsubs are so scant.
For BD releases there's plenty of reason for them to exist, however it seems that's generally a smaller piece of the pie compared to speedsubbing.
I remember Nutbladder left in some or all of the Japanese commercials for some of their releases, and that was actually really fun/hilarious. I mean that's how motherfucking Morning Rescue started. More groups could/should do that.

When fansubbers do it, its to portray a relatable and understandable emotion or mood to the audience that keeps true to the original spoken word. Either because translating it verbatim will not be understood by non native speakers (this is what happens most of the time in fansubs), or because the editor felt like having a laugh, but still keeping in tune with the original words.

I think they have a new translator or something because halfway through Young Black Jack they started using honourifics instead of doing some counterintuitive bullshit with the names. The translation for Osomatsu-san is spot on as well and I do remember them actually bothering to explain one of the Japanese puns.
That said Daisuki is still fucking terrible with completely incorrect translations (looking at you IBO). It's like their translator doesn't even know English.

Of course not. There's a huge demand for it, and crunchyroll can't satisfy everybody. Also fansubbing is relatively easy, anybody with some Japanese knowledge and some time on their hands can download Aegisub and go make some fansubs. Considering how easy it is to start a fansub group and how many people are capable of making one I think it is statistically absurd to believe that people will just stop one day.
What's the point of fansubbing something getting a simulcast? Fansub the shows they don't pick up, or some older shows.
I've been waiting for someone to finish Queen Millennia, but fansubbers these days are more interested in duplicating Funi or CRs efforts and whining when people prefer the official release.
