CG gets talked about a lot, but I never hear much about the OST. There may not be any standalone tunes that you can really dig into, but the music does an incredible job of establishing tone and setting the mood for any given scene (which is any track's purpose, obviously, but CG accomplishes it so well).

I like how the Black Knights/rebel tracks all follow that Spanish guitar "standoff" theme. It's a neat contrast to the grandeur and orchestra of the Britannian themes. Also dig how each tune has it's own "progression" via multiple tracks that play during the planning stages of an episode and then evolving to a more intense rendition during the action sequences. The whole OST was designed quite meticulously to fit with the series.

I'll just warn you that the suffering doesn't kick in untilEpisode 8but when it kicks in it goes balls to the wall. The SoL shenanigans of the first part are meant to make you feel attached to the characters before it goes in for the kill. Best girl does make her appearance in Episode 3 (pic almost related)
It also has a really nice flower motif along with a really great OST. If anything it's a very pretty anime despite an average animation budget.

I feel that UBW's soundtrack was highly underrated, especially beyond the VN tracks. The way it was scored was legitimately groundbreaking as far as anime is concerned.

I've been a fan of Fukasawa every since I heard his work in Mahoyo, and UBW is very much an extension of that sound, but thematically and composition-wise it's much richer. The biggest shame is the fact that so much of his music didn't make it on an album. I doubt we even have 1/4th of his compositions.
