She is an unusual character all things considered. One of the most skilled and experience Meguca, and yet was fated to die in EVERY timeline. So we have no idea what she would really be like if she DID survive, against all odds.
Using the TTGL example, she isn't actually Simon, but KAMINA. The guy who is the older mentor who dies. Imagine if Kamina didn't die, what would happen to the story?

Kamina was supposed to die. He was the weakest of all the characters: his purpose was giving them the drive and motivation keep on fighting and pushing ahead.
He isn't like Mami at all.

I don't think that Mami is stated to die in every single timeline, unless you count making it to Walmartnight as instant death in which case that would go for every meguca.
Mami is stated to completely break whenever she learns the truth about witches, though, and the PSP games and TDS show that she's also very suspectable to witching out (although not as much as Sallaka who is guaranteed to go witch whenever she contracts).
In Rebellion Homura went up against Mami seeing her as the same emotionally frail person that she had been in the previous timelines, but she forgot that this Mami was in a world where witches didn't exist and she had friends all around her, allowing Mami to fight at full power. As a result Homura got BTFO and completely humiliated.
And if those magical stats that were released by the writers a while back are considered, Mami had a huge magic stat to begin with and is basically a prodigy. She just gets overshadowed by Madoka's NG++++++++++ bs.
