The chinese knives are actually pretty awesome though. Wrecked Caster, and Saber, can kill Berserker, buff his defenses, can be spammed as mid-range weapons, and if you have the originals they one-shot monsters like gorgon form Medusa with no effort.

Nasu purposely makes an effort of nerfing UBW and projection as much as possible though. Mooncell Archer is a less screwed in that respect, but that's because the CCC team had already animated Archer pulling Excalibur out of his ass, so he asspulled an excuse for it.

The weapon he chose to use in melee never mattered, because standard melee is only something Archer engages in when going against either weak targets, or while measuring his enemy for a different killing blow. Even against a heavily-gimped Lancer, it was obvious that he was completely on the defensive and he's never shown to rely on the blade combat to win.
He's never going to out-skill a blademaster. It's pointless to fret over using a powerful weapon when he knows he's not going to win the melee anyway. Emiya Shirou's entire combat style against anyone who is not Gilgamesh can be summed up as "hold on and don't die until you can pull a broken finishing move." K&B are the swords he's most comfortable with, so he just uses that. It's not as if resilience is a conern either, when he can just keep pulling copies out of his ass if they shatter.

We know he has very clear limits in what he can project, Rho Aias is named as his greatest projection and also his greatest defense and it can only barely prevent a B+ rank anti-army noble phantasm from killing him outright. While most of the swords in UBW are noble phantasms with powerful effects, he has little besides offensive options, but he also lacks the raw stats to use most of his swords as well as the original owners could, even if he can replicate their skill. That's not hard countering anything. He has soft counters, but they'll never be ideal.
Besides, Archer has a distinct fighting style that he prefers to use over anything else. It's not just Kanshou and Byakuya (which he inscribed with the lyrics of Crane Wing Three Realm so they're HIS swords, not the original swords he based them on), he also uses Caladbolg II for stabbing attacks in melee as part of his style, but his personal fighting style utilizes primarily the modded versions of various weapons, the weapons he personally customized to suit his own needs and preferences, and he'll always prefer his personalized weapons because they suit him and his talents the best.
Archer is a weak servant in terms of direct fighting power. He loses to Berserker, loses to Saber immediately in the prologue, loses to Saber Alter immediately, and loses to Lancer. Having a thousand swords to pull from in UBW won't change that. His strength lies in his cunning and savvy, same as any other member of the Archer class.
