Probably the same reason I watched FLCL and enjoyed it. It's just a fun show. Nonsensical, while making sense in it's own way. Great visuals, love the fight scenes and it's just got a cool factor. Also, I want to know how serious he is about how he got his power.

In OPM you already know the hero is immortal, so when he shows weakness in tense moments you don't know if he's going to make it or not.

The show is unberable
it's a fun deconstruction of shounen with solid world building. The narration built around saitama is interesting and compelling. look how the hero organization is established, its imperfect (its internal politics bullying the police force or its obvious disorganization and mismanagement i.e members using their powers to capture lost monster experiments) ONE is able to invoke suspense and emotion even though readers will always be certain that the current plot will be solved by saitama.
then there's how he handles saitama's infinite strength. despite possessing plot armor itself, ONE is able to write situations that saitama can not solve perfectly with just his strength alone through his character. examples like how the city turned against him after he solves the meteor crisis.

I enjoy the fact the S Class heroes in OPM are all complete misfits who have trouble working together. At the same time you have C Class heroes who might not be very strong, but will risk themselves for the sakes of others and embody the spirit of a hero very well.
There's something of a mid-series Gintama feel about the show too which I enjoy.
