I don't disagree with you, but there's just so much good stuff out there that it's disappointing when people only stick with what's super popular.
"entry level" is a dumb phrase, but of course these threads are based on taste and personal experience, so FLCL for example, I watched for the first time when I was 13. For me, it was one of the anime that got me into anime. It's amazingly fun, amazing soundtrack, great animation and impact.
But after watching a lot more shows, good, bad, and mediocre, can you go back to FLCL and say, yes, this is still one of the best anime I've ever seen? Maybe! But some shows REALLY don't hold up, even though they might be popular and have big fanbases.

As for how well Eva and FLCL stand after several rewatches. Well, they get better everytime I rewatch them, specially Eva (at least for me).

also a matter of taste, but I feel that way about Cowboy Bebop, Akira, and Blue Sub No. 6.
If you've never watched Blue Sub. 6 I HIGHLY recommend it. It came out right in the era of bad CGI, but if you can get past the awkward 3D submarines it's some of the greatest music/animation/storytelling I've ever seen.

When I started anime, I used to believe Eva and Lain were the best because they were so deep xD.
Then I considered myself to have matured and found myself liking Aria, Kino's Journey and LOGH more. Getting more into slice of life, iyashikei shit.
Now I realize how visually boring the latter are and found myself appreciating Eva and Lain, not because of supposed depth but because of the effective atmosphere and visual storytelling. Now I have a sense for surreal, more abstract works, more pleasing to the eye.
Anyone else go through this phase? Inb4 blog

Banter aside, I've always loved iyashikei the most. I didn't get into anime until I was 18 though, and never really had an edgy anime phase, and I've never really cared for psychological 2deep4u as the content of it never really interests me. The only one that did spark my interest was Lain.
Plot has never been the top of my priorities. I prefer smoother narratives, not ones that jump around between happy and depressing.

Most people probably as long as they aren't casual normalshits or don't fall into a comfortable niche and basically stunt their own growth. You're just expanding you sensibilities and appreciation of art, gaining more clarity and insight along the way. So you count Eva and Lain as "deep xD" but then ended up liking Kino's Journey, which is literally philosophy 101 and actually repeats the phrases it thought were clever in a stupid splash screen like you didn't get the incredibly obvious meaning the first time. Kino's Journey lacks subtlety in such a painful manner that I found myself unable to take it seriously at all. It was just a boring show that was really far up its own ass as far as I'm concerned. There were some interesting concepts but it failed to go into any depth on any of them, and any attempts to do so ended up in pointless repetition.

I enjoyed it a lot. The characters are actually quite a lot more interesting than they appear at first, which is kind of the whole point. MC gets called out for not being a proper dev several times andbecomes a pretty good writer later on in the novels.
If you have some interest in it, I'd suggest waiting for the continuation of the anime (they haven't announced the format) and marathoning it all.
