Akane, on the other hand, immediately started fighting Happosai to try and help get Ranma's strength back, and then when it looked like the chart was lost was willing to drop everything and go with Ranma to help him get it back.

The point is that Ukyo was more considered with her happiness. Ranma losing his strength, in Ukyo's opinion, invalidated the reason behind the arranged marriage between Ranma and Akane. (To ensure their schools of martial arts had a future) So her claim now took presidence. She really didn't care that Ranma would be miserable without his strength.
