If I ever learned anything about this fandom, it's that nobody actually likes Asuka. Not Asuka fans. Not even Anno, or Tsurumaki, even if they say so.
They like the idea of a sexy underaged tsundere, who serves as a vessel for their fantasies. This is why an Asuka fan's conception of Asuka is generally never accurate, because they prefer the version in their head more than the Asuka that was.
In reality most of them are bitter about NGE and how it ended, and how Asuka in reality isn't half as good as they think it is.

Both the manga and all spinoffs are far kinder on Asuka than the original was. It's tough to accept but NGE? It wasn't very kind with Asuka. It did portray her as an abysmal failure whose only nice qualities were her superficial ones.
The Sadamoto manga IIRC shoves Asuka in the end after Shinji saves her, and makes Rei explode out of nowhere after a scene which more or less invalidates the character and it's progress up until that point.
The best end for Rei in the NGE2 game has her dying for good and whatnot. With Asuka, she is spared as usual.
Relatively speaking, it's all positive stuff for Asuka, all baseline negative for Rei.

Asuka is suppose to be the exact opposite of Shinji. She starts off as super outgoing, overbearing and tsundere whereas Shinji is overly quiet, shy and insular. Asuka is also the prodigy Eva pilot who has never made a mistake. Where Shinji is the naive Eva pilot who just started out and lacks experience.
Over the course of the show, Shinji becomes more experienced/synched at piloting an Eva and gains more recognition. As well as becoming more open to people. While Asuka has the exact opposite happen.
Its really not that hard to figure out. Its kind of the whole point of the show. Misato goes through a similar dynamic with Shinji.

She's a side-character in NGE too, literally. She's not the main character.
It's the portrayal and appearance that matters. Asuka is portrayed as more stable and stronger, and Shinji actually gets to save her without being punished for it. Because if it was Rei he wanted to save, then he gets the world destroyed and everybody hates him like in Rebuild.
Get the point? If Asuka had ten minutes and the rest thirty each, it could still be kinder and better for Asuka as long as the portrayal was kind, or alternatively, those thirty minutes were spent detailing how shitty the other characters are.

She represents the endgame for Shinji's emotional development. Rei and Misato were introduced earlier, but Asuka is the one that Shinji needs to end up with or he loses.
She is basically left with two choices: Asuka or Rei. Rei gets introduced first and he is more comfortable with her, but Rei is a trap option. Rei will never challenge Shinji or force him to grow, she is the perfect waifu for those that want only comfort and a nonthreatening relationship. This is the same choice that Gendo made when he was in Shinji's shoes by taking solace in Yui, a fact that gets hammered home by Rei being a literal clone of Shinji's mother.
Asuka, on the other hand, has her own problems. She is opinionated. She has her ups and downs. A successful relationship with Asuka requires Shinji to come out of his shell and deal with his relationship issues, just as much as Asuka would need to overcome her own faults to meet Shinji halfway. Because thats what dealing with other people is actually like: both sides need to give, adapt, and participate.
This is why Rei's interactions with Shinji basically vanish as soon as Asuka shows up, and why Asuka is both the first and the last person that we see Shinji with in EoE, and Shinji failing to save Asuka is the thing that finally pushes him over the edge even more than Kaworu and Misato's death. They couldn't have hammered home the fact that Asuka/Shinji was the endgame any harder if they tried.
So yeah, she adds a lot to the show by being there.
