I think it's likely that Mai will be playable eventually. She got introduced in the previous title, allowing people who haven't read her manga to learn who she is and her backstory. She has a popular voice actress (Hayami Saori) and was used as a system voice. And the creator of the franchise had said that her story would continue when Remix Heart ended and also produced a design for after she graduated.
The best genderbenders are where the artist pays attention to detail in body shape. You can tell in Boku Girl where Mizuki swaps between male and female based on the actual art. It's subtle, but there. Also I agree, when the male MC's mind starts adjusting to the female body. Simply the best.

Here are my preferred titles (though your mileage may vary): I liked the most Ame Nochi Hare (good characterizations and avoids what I find to be the more annoying shoujo tropes), Haikyo Circle (seemed promising as it had a pretty original concept and a protagonist with specific motivations, though only I've only read 3 chapters of it so I have no idea how it turned out), and Remix Heart (likeable MC and surprisingly good covering of the protagonist's adaptation to being a girl). I found Asuka Hybrid, Fukigen Cinderella and Kanojo ni Naru Hi Another and Nozomu Nozomi to be fairly good. I fould Boku Girl, Idol Pretender, Kanojo ni Naru Hi, Mao Marimo and Megu Milk to be alright.
Idol Pretender probably got axed and the author had to finish it in a hurry. The pacing was shot and the personality of the male love interest was mishandled rather badly, but I thought it was otherwise alright.

Define "sunshine and rainbows". Haikyo Circle seemed fairly dark. Ame Nochi Hare was pretty serious, as was Mao Marimo, Naru Hi Another and Nozomu Nozomi. Other series had serious moments too even if lighthearted overall.
And I don't consider Boku wa Marie a genderbender series because there is no sex change or body swap. I guess you could call it a genderbender in that it plays with gender roles, but by that definition anything with a trap or crossdressing in it is a genderbender.

To be honest I don't particularly care for Boku Girl. No matter what happens, the status quo between Mizuki and Takeru gets maintained. I suspect that Boku Girl has been a victim of its own success, since the author feels the need to keep it going without changing the core relationship dynamic despite it having remained more or less the same for over 80 chapters. Instead he has padded out the story by the introduction of new side-characters like the underwear dude or his fiance and of course by the series' transformation into a harem. In order to provide romantic developments not involving Takeru and Mizuki there has been a host of other characters that have fallen in love with Mizuki.
And I don't really like Mizuki as a character. I think that she behaves very stupidly, e.g. when she was unable to figure out how women use the bathroom. And in general Mizuki is pretty passive and seems quite helpless. And the way that everyone wants to fuck him/her gets rather tiresome. I always find it stupid when literally every person on the planet wants to fuck the genderbent character even if they are attractive.
Fucking criminal this got cancelled.

Manga with full-time transformations where the MC is attracted only to girls include Asuka Hybrid, Ichinensei ni Nacchattara, Joshi Shougakusei Hajimemashita, Kashimashi, Tsukiyo no Fromage and Panikuru Iko-san. The number of these is slightlu smaller, however that can be countered by the fact that almost all manga where the MC can switch forms have the MC only be attracted to women (e.g. Adolescence Avatar, Futaba-kun Change, Gacha Gacha Secret, Kampfer, Okitsune-sama de Chu, Ore Twintail, Ranma, Sai Taker, Saikyou Mahou Shoujo Akira). I think it's more interesting if the character is mentally affected by the transformation instead of them simply treating it as a disguise.
