This isn't an insult, but let me put it this way:
FSN is plenty 'deep' if F/Z counts as 'deep', but F/Z is actually somewhat more shallow than FSN. F/Z lays everything bare: there's very little that requires any modicum of thought. Kiri is not 'mature', nor was he 'serious' - he's essentially a child at heart with an adult's body and adult tools to do the job.
His 'dreams' are well-intentioned and idealistic - just like Shirou's. But the difference is that while Shirou thinks about how to, perhaps, accomplish his goal, Kiritsugu never did so. When he realized that his goal could not be fulfilled by normal means, he could only rely on what Gilgamesh correctly referred to as a 'tool of dubious use' i.e. the Holy Grail. Shirou, once he realized his dream was impossible, decided to use his own power to go as far as he possibly could, to do what Kuzuki referred in this past episode as 'right'. He simply walked a path that, while perhaps unfeasible and unmistakably overly idealized, was one he wouldn't regret walking.
In other words, F/Z by making everything shallow appeared to be deep. Nothing is deep about F/Z with the POSSIBLE exception of Kirei's interesting mental state.

That's some terrible splitting right there. Your 2nd movie is 2 days long, and the only things that happen in it is Shirou talking with Zouken, and Sakura killing Shinji/kidnapping Illya.
My opinion for the splits, if it was a trilogy with roughly the same length for each movie:
Part 1: Most of the Servants' death, introduction of Zouken and True Assassin's characters, a lot of Kirei and Illya scenes, start of the setup for Shirou/Sakura relationship. End with Saber being swallowed by the shadow.
Part 2: Start with Rider saving Shirou, followed shortly by the school scene, Rider identity reveal, Sakura's past reveal, giving up on being a superhero, and the rain scene. The rest is focused on the interactions between Sakura/Rin and Shirou/Illya. Archer's death and Shirou's arm loss happen a little over halfway through it. There's also all the Nightmares, and all the hinting towards Sakura being the shadow, while Shirou is somewhat aware of that, and is constantly conflicted on wether to kill her. Then there's the confirmation that it's her with Gil's death, and all the stuff built up in this one would come to a climax with Sakura killing Shinji, going batshit, and attacking the Emiya house (scene is appropriately called "Finale"). It's cut there.
Part 3: All the great stuff until the end. If it followed the VN really closely, it would start right at the amazing scene where Shirou recaps everything that's happened so far ("Let's make the final decision."), and decides to "Save Sakura. Bring back Ilya".

I watch Fate/stay night and I'm confused as to why we should CARE about the ideals of the protagonist from a writing standpoint. You shouldn't 'care' per-se unless you picked them up yourself from the writing. If so then you should care as they are now part of the character - same reason why, for example, a man known for being greedy within the story should act accordingly.
Shirou's ideals are not revealed early on, thusly we are confused and in the dark.
In some forms, this is good: he looks like a fucking retard because, for a normal human which we assume he is lacking other information, he IS being a fucking retard.
Once we understand his ideals, the intent is for the reader to go [holy shit now it makes sense!] A good / compatible writer will accomplish this, while a second-rate or stylistically incompatible one will fail.
His ideals don't come from himself - in fact, nothing does. He doesn't exist from his own standpoint, it's why he's so good at archery - the Japanese archer is meant to make the self a target and nullify his own existence when shooting, and this is the state Shirou is stuck in hence his 'brokeness'. From a normal human standpoint, it's stupid - how can there be something more important than the self? How can one's dream be the same as another's for the purpose of completing a dead man's dream? But from Shirou's standpoint, it's sensible - he has no identity and is simply choosing whose mask he'll wear, and it is no surprise he chose the man who saved him.
The Grail fire essentially erased 'Shirou'. Only a shell that resembled him remained, similar to a new-born with little sense of self and little personality. He'll mimic a nearby 'idol'.
What are the differences in Shirou, Kiritsugu and Archer's ideals?

Archer and Shirou have the same view point for their ideals. Archer is saving people through his whole life and he didn't regret any of it, he fulfill his ideals. The regret comes after his death and he make contract with the Gaia when he become Counter Guardian (Defender?) and think he'll save more people even after his death. This is the part when he is betrayed by his own ideal.
