They're readable. Much is machine-assisted translation (the translator speaks basic Japanese but needs electronic dictionary to look up kanji) but some (a couple of late volumes marked as Preview translation) is almost machine translation (the translator barely knows Japanese and just edited machine output to something they think is accurate). There has been at least cursory editing though and they are all readable. It helps that the language used in original Japanese was usually not particularly complicated.

Obviously they translated this by appending "The Great" on the front, but when it comes to the pronoun itself, they should still conform to grammatical rules when using me or I. Otherwise even in situations where you aren't worrying about Englishizing the 様 you would be translating 俺, 私, 僕, 我 and so on as "I" all the time without care for whether "me" would be grammatically correct.

That's... not quite right.
Mk I is his current trump card, which is the one that just got summoned. It has a high mana input balanced by a good sized performance output.
Mk II is what he uses in place of touki. It gave him the ability to more or less be on par with a standard magic knight, if not one of the higher level fighters and it got shredded by North and Sword before the fight really began.
We have not seen the Mk III. Supposedly it would be low mana input and high performance output.
I believe the Mk III is rolled out and perfected by his daughter, Lili(Lila?) and it more or less takes the world by storm. which should prove interesting for the next series.
The Prototype, or Mk 0 is ridiculously huge mana input and performance output, while also being tricked out with his best gear, including his dad's defense negating sword. That one gets summoned in for the grand finale. It's also the one he used against Orsted, which let him push the Dragon God into enough of a corner that he had to take the fight seriously. A feat not copied until North God, with Fighting God armor and Gravity Sword came back for the finale.
But I'm working from about a month back's memory. So I could be wrong.
So, I just thought of a thing for Akito to actually be good at, when he gets summoned.
Assuming he's summoned like Nanahoshi, then he shouldn't have magic, and should basically have the same physicality, more or less frozen in time, right?

I guess you could make a case that in English a respectful way to address your grandmother would simply be Grandmother (as opposed to calling her the less formal "grandma") but that may not go far enough.
I'd say to call her "Oh great grandmother" if it didn't create confusion between a "great" grandmother and a "great grandmother". Another option would be "Oh Grandmother the Great" or "Most Honored Grandmother" but they all sound weird.
You could try sticking O on the front to make it sound grander (as in O Canada, O Lord God, O Captain my Captain, O ye of little faith, O Grandmother) but this isn't a correct equivalence in any sense other than that it sounds vaguely cool and archaic.

Wheel of time.........I so recommend it even if it is so dense detail wise. Has the same type of story telling Mushoku tensei to the point that when you look at the ending and reread the beginning there are no plot holes and everything happens for a reason. No Ass pules, just so many character interactions and world building to behold...................
