It would be so easy to do! You can have any character design you want. Pretty boys, cute girls, fat otakus or beef cakes. Literally any type of person is capable of being a good bowler. You can animate the fuck out of a ball curving into the pocket, and make such good use of the exploding sounds of a strike.
You can have the spazzing out over technical stuff too. Have a character that can read the oil patterns on the lane incredibly well, or have someone that always knows when to switch balls for a certain shot pattern. Hell, the variety of balls that are available and how they can match each characters personalities is such an easy plot point to utilize.
And there's so much room for reaction shots it's not even funny. Some opponent just overpowers every shot with his explosive power? Everyone is shocked and amazed! A character has to pick up a challenging split to stay in the match? When he makes it the crowd goes crazy. I'm more amazed then anything that someone hasn't tried this yet. There's been like one bowling manga that I've seen, and it was shit

It's not "margin of progress" friendly.
Think about it. When you have to beat someone (Tennis, Basket, Soccer, etc...) it's easy to made-up some new opponent incredibly strong and show how strong he his by making him beat some previous character.
But for bowling, once you reach the level of a perfect score (and let's be honest, it's going to be very quick because you need shock effect) then how do you go higher ? It would become quickly extremely boring.

Bullshit. Bowling isn't as easy as just getting a "perfect score". There is plenty of room for improvement constantly. You can always show the MCs team starting to get good at their house shot, only to be flabbergasted by how difficult a shot they put down for tournaments.
It's also really easy to introduce new, really good bowlers. Hell, it would make more sense in a bowling series because anyone can become a good bowler. It's all about practice. In baseball series and the such, you got at least 5 teams running around that are at the pro level already. At least it makes more sense in bowling to have really good young players. There's tons of margin of progress that can occur. The MC might need to figure out his spare game, or might get a new ball and needs to figure out how it works on the lane. Then there's his entire team to think about, each with their own issues that needs working on. Maybe the beef cake of the team needs to learn to control his power since the ball isn't reacting strong enough, or the frail megane girl has to overcome her fear of the gutter when throwing her 10 pin spares.
Seriously, if you can make something like tennis have a million and a half twists and turns then you can do the same thing for bowling.

That's also a problem in cooking manga.
The only way to show progress in cooking, expect from the visuals and it generaly doesn't matter, is to show the tasting reactions.
So you need judges, with a wide range of reactions... but since you want to show competition, it's always the highest reaction and the MC only wins by a fine margin (and always going last in the tasting order). So you need new judges, and again, and again...
Yakitate had clearly troubles with that, Souma is even worse and burns through judges at an incredible speed.

If all you do in baseball is hit home runs you win too. Ever watch a pro bowling match? You don't see 300s being thrown every often. They all have great scores, but throwing 12 strikes in a row is certainly not easy.
I'll admit, in the real world bowling isn't the most exciting thing to watch. But how about Mahjong? Or Go? Or any other boring sport they make ridiculously interesting in anime. If they properly use their animation, bowling can be a hell of an entertaining show.

There's totally direct competition, just not in the traditional sense. You're still battling against the other team, so total scores and all of that are important. You can talk about the enemy is playing the same line as the MC, screwing up his oil pattern and fucking up his shots. Plus there's all the drama between teams that can occur, which is a mental battle in itself.
Mahjong is the same sort of thing. You're not in "direct" competition, but there are still ways to play against the opponents. I'm not saying the series would be a 200+ episode, 10 year long running anime. But you could do an exciting as hell 50-100 episode long series that follows the MC and his team going through to the national championships or something.

I think an Olympics manga would be nice.
With a "survival" spirit, characters being beaten at different stages and hopes about medals here and there. Since Japan isn't a great olympic nation you could imagine some really strong opponent and difficulties just to get a bronze medal.
In sports like Judo, the japanese characters would have it easy and have fights for the golden medal against Frenchs, Russians or eachother.
In sports like 100m-dash, even making it to the final would be an incredible feat.

I came up with a chess variant a few years back that could really lend itself to a compelling narrative.
You know how each piece has valid attack squares? The variant puts special emphasis on that.
See pic. Only the shown pieces have a valid first move for White. The King directly commands the pieces in red, and indirectly commands the pieces in blue BECAUSE the pieces in red are commanded by the King.
There's a few unique situations in this "Command Chess", but all other rules of normal chess are the same. Strategy (the long game) is even more pronounced in this variant.
