Spacesuits are pressurized, one of the easiest ways to maintain that is by having tight "fabric" apply some of the pressure as well. The alternative, is a large, bulky near-exoskeleton like the modern real-world suit. They also can function as blood-restricters so that all of your blood doesn't go to one part of your body during high-G moves. This is a real thing jet pilots wear. Beyond that, the suits need to be nonrestrictive so that the pilots can pilot easily as well.
Plus, fanservice, naturally.
