Because Misty was an awful character with a vague as fuck goal that she barely did anything to achieve, and the only ones who like her were nostalgiafags and autistic as fuck tsunderefag shippers who treat the dub as canon (fun fact: Misty had no feelings for Ash in the Japanese version). Brock stayed for longer, but he got even more stale as the series went on, so he finally left for good at the end of DP.
And really, each new girl has just been better than the previous one, other than Iris, who happened to be a black Misty with dragons instead of water, so them getting replaced is a good thing.
