Everyone else was too afraid to try a different way to cook it, as they were under the impression that unless they made the exact recipe flawlessly, they would fail.
Technically it was impossible to tenderize it in that time, if they made the recipe the traditional way.
Souma's idea worked under pressure and the teacher liked it, which was sheer luck that diverging from the recipe didn't cause them to fail.
Only an outside mindset which hadn't seen Tootsuki's strictness firsthand, would even attempt such a gamble.
Souma does a lot of stuff like this in the series, making up for others experience and talent, with alternate methods of cooking and improvised techniques.
Later on in pic relatedMegumi improvised with bad ingredients, so the autistic teacher failed her for changing the recipe.
