They were caricatures. They exaggerated aspects of the shows in order to make them more interesting/amusing to consider during production.
This makes sure the anime they're making is actually considered by the audience and not just thought of as the background task that the shirobako cast are doing.
As such, the viewers are watching because they want to see not only what happens next in the studio, but also what happens in the anime they're making.
