I know that 1080p is usually just an upscale, but some of the shows this season are looking way better in 1080p for me.

It's basically a placebo unless you're comparing a 1080p bloat encode to a shitty 720p CR encode.

They are all an upscale. However some shows as of recent have been drawn in native 1080p, but that only will show in bds.

It still is, except in some cases it's upscaled from a source higher than 720p. I think BS11's Owari no Seraph source is higher than 720p.
I think for this season, Shokugeki no Soma and Grisaia no Meikyuu are the only full 1080p show airing, outside of some 3DCG and children's shows.
There are a few shows that are higher than 720, but not quite 1080, like DanMachi, UBW, Owari no Seraph. Kyoani's standard is the same with Hibike Euphonium, where the show is 955p, but the OP and ED are full HD.

You're probably using CR rips (like you have any other choice lately). The 1080 video has better quality. Just imagine the process. They get the original video. They encode that file twice, one upscaled from the source, and the other left like that, but lowering the bitrate. Of course, the first is going to look more like the original.
