Really though, I'd watch it. Has enough lore to be a good one. Especially if it doesn't focus on a cast but instead focuses on a different race/warband/chapter every couple of episodes.

I think they did good job with that. I'm saying it from non anime fan perceptive (I dislike anime at point for when I started liking Tau). They take inspiration and eastern themes but don't overdo this and they don't feel weebo race.
Also they have other appeal, like being least grimdark race, like they are more like genue good guys than other races what is refreshing. They are inversion of cliche where humanity are small race with imaginative thinking and progress while aliens had stagnated empire. They are alliance of various races, and are more pragmatic than others.
Also it's funny how Tau don't have over sized mechs or don't use melee weapons, what would you expect from race inpired by anime.

Well when you consider exactly what manga it was that inspired the tau, the absence of melee weapons makes perfect sense.
Either way the Eldar are all things considered the far more typically animu faction than the Tau, and would generally be better subjects for an anime adaption.

Maybe it could have happened long ago, like that Starship troopers OVA adaptation, but it will need a lot of effort now. If it somehow happened I would actually like to see production I.G work on it.

40k isn't very popular primarily due to model costs as well as how intense the compeoition is when it comes to sci-fi models.
But from what I have heard WHFRP is one of the most popular tabletop RPG systems in all of nippon.
An anime about Comissar Ciaphas Cain's shenanigans, with lots of fanservice by the mixed regiment would be fun.
Then if we want more grimpderp, Inquisition Wars, and we would have Meh'Lindi as delicious brown.
More dakka dakka? the crusade for the Sabbat worls with Gaun'ts Ghosts(yea yea it really kinda pisses on the fluf).

Thats due to the setting though. With 10.000 worlds to chose from the only way to actually really influence plot is either a new dark crusade, a major chapter like the ones that took the legion names going heretic or being wiped out somehow or by introducing a whole new race or a new hive fleet or something equally major.
To progress the overall plot you have to literally use galaxy shattering events, which is hard to do.
