I vote curling. The slow pace and tense nature of curling matches as well as the way the players have to communicate would translate really well into an anime.

Shot put. There're so many different ways to throw the ball, it would make it perfect for a ton of "Ultimate/Secret Techniques" for a less-realistic one.
I wanted to make a curling anime/manga. It was about a guy who could curl competitively by himself through insanely high accuracy ricochets off the other teams stones, often hitting two or three stones to place his stone where he wanted.
Of course, he'd be defeated by the power of teamwork at the Heavenly Orbit World Curling Championships, forcing him to assemble a team of super skilled sweepers and a skip.

Actually this isn't a bad idea. I could imagine the wrap-up at the end of every episode being really comfy, like them either going home empty-handed, having caught a lot, one of them having caught nothing and the others comforting her. Maybe even a recurring theme of this one big fish that one of them is determined to catch.
Or they could go to different fishing spots and make it more outdoorsy in general, sort of like Yama no Susume.

I'd really like to see more kendo anime. Bamboo Blade was good, but you would think there would be more kendo-related series, it's a distinctly Japanese sport that is hugely popular. It's also highly competitive at the high school and university levels and we all know how much the elevens love high school anime/manga.I'm probably somewhat biased as I'm a kendofag.There are some other manga besides BB, but it's just not as good as seeing the matches animated.

You have a container of water and then you fill it, and you throw the water up in the air and you try to catch as much back in the container as you can, beating your record each time. Of course there's a minimum height that it can g up to, and you get three chances for if you don't go past the minimum height without losing.

High schools often have exhibition matches of the boys kendo club against the girls nagainata club, I love watching them on youtube. An anime or manga based around an MC in the kendo club getting ready for the year's shiai circuit and going to competitions with a side plot of romance between maybe one girl on the kendo team and one from the naginata club would be really good, with interhigh competition for both sports and exhibition matches between the two.
