All western swords were made by pouring molten steel into clay molds to make what is called a "Sword Blank".
These blanks were then heated and shaped as needed, tempered, and sharpened.
A spanish smith could produce a fine broadsword in 2 - 3 days.
Western swords were made with a purer iron ore, which greatly reduces the amount of work needed to be done when making them. You have a great deal of control over the carbon content and don't need to fold it to get a well-balanced blade that is both sharp and flexible.
Japanese swords were usually made by refining iron sands, so their steel had very high iron content.
They folded the blades to even the content out.
This results in a superior hardness to western swords in the CUTTING EDGE ONLY, but also makes the edge VERY VERY BRITTLE. To compensate for this, softer steels were used to make the spines, sides, and core of the swords.
Japanese smiths would spend up to a month on a single shitty blade with only 2 grades of metal to them.
Japanese swords are better at stabbing on hard armors than western swords because they are stiff, and have a chisel-shaped tip of VERY hard steel.
they also chip like a motherfucker and require regular maintenance. They had a very limited range of use on the battlefield.
Western swords were more flexible, and better suited for a wider range of combat roles (see: halfswording), and would bend rather than break.
They also had a more uniform strength to the entire blade and core.
