The anime didn't really do justice to why Crab changed. In the show, there's three lines where she mentions she wants to cut her hair to move on with her life, like Hanekawa did. Then boom, she's all cheery in second season.
In the LNs, there's an entire chapter devoted to Araragi's explanation of her personality shift and how he feels about it. He explains how through the pair's confrontation with Kaiki, she was able to properly let go of her past. Senjougahara put up all those mental barriers because of what Kaiki did to her and her family, and their confrontation was a way for her to prove to both Kaiki and herself that her past didn't break her. Araragi recognizes that he was the catalyst in this; even before their confrontation with Kaiki, Senjougahara was slowly becoming more comfortable with herself around Araragi, and she wouldn't have wanted to come to peace with her past at all if she wasn't dating him. He goes on to say how he really prefers the "new" Senjougahara.
The anime also doesn't have Araragi and Senjougahara interact directly on screen for the entirety of Season 2 + Hana. We don't see a single hint of their relationship from the end of Bake to the end of Tsuki. What even.
I like what the author did to Crab, in theory. But we don't know how much depth she actually has as a character now because she's had so little screen time since her change. She seemed pretty interesting in how she balanced her old sarcastic and cold personality with her new loving side when she met Kaiki at the airport, but that's one scene out of like 10 story arcs. Right now, she is a shit character because all we've been shown makes it seem like she got neutered to make her cuter.

Not entirely, the other poster was right about Nisio not adequately giving Hitagi's problems more focus, because of her status as being "strong".
She talked to Araragi about still blaming herself about her mother leaving the family, and even though Shaft cut this out, she confided with Hanekawa during Tsubasa Tiger. She STILL blames herself for that incident with the cult.
Also, in Koi, Kaiki all but framed the exact problem the couple is facing, but one that Nisio tiptoed around. Hitagi still doesn't value herself except for how Araragi values her, and that is a problem. Not being able to just tell your boyfriend not to kill himself at every opportunity because you are afraid of the consequences shows a real issue in a relationship that needs to be addressed.

How exactly is she boring? She gives great advice, has good jokes, and in Kizu and Tiger she was pretty awesome. I was sad how they cut out the part in Family where Hanekawa scarily saw through Araragi's tsundere with the cheek healing. The anime took away some of the imposing presence and wit. Glad that stuff was in the commentaries. It's sad that the anime only part of the fandom view her as just the shy class prez cliche, when her character is a total deconstruction of it.
And how were her stories that long, Family was one of the shortest, Tiger was one of the most popular, and Cat was shared with another character. The only people who seem to think this are people who hate her anyway.
