The Senju BTFO the Uchiha so for a while they would be the strongest, then the Senju somehow up and fucked off so then it went the Uchiha, then the Uchiha outcrazied themselves and died leaving one guy left meaning even if the Uchiha were the strongest in the village, the Hyuga would be the next strongest since I doubt just a single Uchiha Genin would be sufficient for the Uchiha to retain that title.
At this point, the Hyuga have basically been playing the long game and become the strongest by default. Their rivals have killed themselves or disappeared.

And for me atleast Sharingan is more useful than byakugan overall, and I'm not talking about Mangekyu bullshit, with basic Sharingan you can read opponents moves before they do it and almost instantly copy jutsus, where with bykugan you have almost 360 view and you can see pressure points, but that's not worth shit if the opponent can predict your movements.

Nah man, in a normal situation the Byakugan is straight better. The Sharingan is only as good as the people you've fought and the mental damage you've sustained to unlock it.
A Sharingan is also limited in what it can do until the 3rd Tomoe when you start getting the prediction shit as seen with Naruto and Sasuke's fight at the Valley of the End where Sasuke mentions he can now see what Naruto is going to do and then Naruto's Nine Tailed Chakra Cloak acts independently of Naruto to hit Sasuke with something his eyes can't predict.
The Byakugan has more uses outside of combat with having microscopic vision and X-ray vision coupled with the 360 Degrees which is where people are most of the time.
That's just my opinion however.

I was making this comparison as if there were two people with similar fighting capabilities and with similar level of sharingan/bykugan, then the sharingan user would have an edge, at least that's what I believe.

Sarutobi was trained by them two, he trained Orochimaru, and he wasn't able to handle them, he had to use a technique which sacrificed his own life to defeat them.

No way they had the numbers to actually carry out a takeover, and their hurt feelings and butts over the villagers distrusting them would be even worse after they just up and killed the strongest protectors of the village.
If they were truly that fed up they should have just fucked off to another village offering the magic eyes to them.
Actually, making them into a powerful but still essentially captive family within the village then mixing it with Sasuke defecting to the Sound and offering his eyes to Orochimaru could have been pretty interesting, come to think of it.

How many are there? A hundred, maybe two? Keeping in mind most don't even get the normal sharingan, both of the groups you mentioned could whoop their asses fairly easily and would have much more backup, but even if the Uchiha had somehow managed to win the losses they'd suffer would utterly cripple them.
Not only would the attempt alone damage them beyond recovery, a victory would also spell doom for the same reasons, simply too many losses to too small a group against a town full of ninjas which can, when it comes to it, field an army of a couple of thousand.
The only rational choice for them would be to either defect en masse or renegotiate their standing.
