There's dozens of new segments we could have in the new season based on new shit that's come out. Although I'd assume we wouldn't really do any of them and it would be more of the same, because "Lets not get too far away from just showing the main guys, Shiki/Shirou and Arc/Saber, mainly the main people": That's one of the only flaws with this series at times, it was rooted in one area.
There are some All around TM type stories that have been a bit better showing everyone with some balance.

Main flaws I can say, some of the changes from the manga were for the worse, it was rooted to the mains or main parings as everything felt like it went the main route, some characters changed or less represented.
Honestly most of that shit was just changed from the manga, or wasn't present there.
Yet, the anime also got so much right here at the same time with its original material that wasn't in the manga. Final Dead Lancer, that Grail War thing, maybe that cafe episode with Alter as well. I don't think that was in there at least.
Nothing's perfect, they made some off changes, but they also changed some for the better.
