By "fun to watch" I mean the ones where it actually feels like Ash and crew are on an adventure, which is supposed to be the whole point of the show. In OS for example you had episodes like them nearly drowning in the not-titanic, or them getting attacked by giant pokemon etc. An episode where they just go "look we've reached this random destination, we met a pokemon and solved some random problem for him" arn't fun.

The difference is that all those shows are almost purely episodic. Time in Pokemon clearly passes. One-year anniversaries occur in-universe, Gary Oak has actually grown up to the point where he's running his own laboratory, other things in the world change, etc.

The problem with most battles in Pokemon is that they just feel like rock-em-sock-em robots and the players trade blows until one of them keels over (So I guess it's kinda accurate to the game in that way, funny enough).
Usually I only bother checking out the show during leagues because that's the only time it feels like the trainers have any sort of overall strategy for their battles. They'll actually switch out their Pokemon, or use the field to their advantage, that sort of thing.

XY's battles are okay but they have a ridiculous amount of stock footage (and it's not hidden well, there are lot of editing tricks you can use to make it less noticeable). A little bit is understandable, but they even ended 3 out of the 4 gym matches they've had so far with that same shot of Pikachu firing thunderbolt. I kinda figured with Pokemon having so much filler they'd save their money to make the gym battles really impressive.

But that's not true at all. He has many more pokemon, many more friends, many more victories, participated in 6 leagues and won one, completed the battle frontier, getting further and further each time. He has a large amount of extremely strong pokemon, if he wanted to be a dick about it, he could just use Charizard, Snorlax, Pikachu, and whatever else are his strongest pokemon over and over for each match and probably win easily. That's not the way he works though, it was even commented on in the episode when he left Charizard in the Valley to train. Misty said something about the fact that he had been using Charizard excessively in his gym battles and none of his other pokemon were getting a chance to fight.
Just because he's progressing slowly doesn't mean he's not progressing. I imagine a goal like becoming a pokemon master isn't very easy, you use Gary as an example, but he just quit, Misty isn't much further to her goal of becoming a "Water pokemon master" whatever that is, and Brock gave up on breeding to become a doctor.

It's the same amount as previous seasons, the difference is that there's no abstract background changing colors anymore.
I don't remember if Pikachu's thunderbolt only had one stock footage in previous seasons or not.

They're putting a good amount of effort in the fillers, I don't remember a single filler badly animated.
The gym battles ARE really impressive animation-wise, and the storyboards are delicious. The stock footage is not a big problem.
