That's a common misconception actually
While it's true that the pig iron has more carbon than the European counterparts, after proper refining, the end results are often just as strong as any western metalworks

If proper physics were to be the judge, the Katana will always win against the Longsword mainly because the single edge gives it a stronger backbone. Furthermore, the curve design grants it the ability to concentrate the slice into a single point which, at the same time, also prevents it from 'biting' into bones.

There is a reason why the west switched from the straight swords into the curved, single edge ones like the Cutlass and Sabres. It just happened that the Japs figured it out sooner.

Contradictory to popular belief, the Samurais trained in mounted archery and their melee weapon is the Naginata. The Katana is purely a ceremonial weapon used only as a last line of defense. Swordsmen in Japan are looked down upon because, technically speaking, they consider the Katana as merely subclass of the polearms.
Such were their disdain for the swords that they never invented shields to accommodate it.

In feudal Japan, the archers rule, followed by the spearmen. Swords are used only as a desperate measure, or for hijacking ships.

I can't tell why it is gaining popularity now but I'm pretty sure that it has something to do with the fact that swords are seen as a symbol of authority

The only advantage that I see in the longsword is the reach and the fact that it can be used for halfswording...which is good against armor. But in terms of flexibility and endurance, curve swords still fares better than the straight swords. (The thrusting swords are a different topic though)

Dark Souls has a pretty good representation of how katanas are supposed to work I'd say (outside of silly things like the washing pole, obviously). They excel at cutting flesh (i.e bleeding the opponent), but break very easily.

Europeans new all about those blade folding methods but they weren't used because it wasn't worth the effort. Good steel, proper fuller and few other thing were enough to make a sword with decent combat ability and were much faster than folding it.

Yes, because people stopped wearing armour since firearms rendered it ineffective.

Europeans used curved swords at least since the 7th century, they were mostly popular for a civilian context though, not for war where usually heavy armour was worn.

It wasn't shit tier, it was made with imported steel in a historical fashion. The katana used in your video is a Paul Chen replica made of modern steel. The longsword they used was a blunt training weapon, made of modern steel too.

If you look how katana are structured this is the result to expect. Katana have a very hard and brittle steel edge and an iron spine. If you hit something that is comparably hard, then the edge might chip away, leaving only the soft back which is eager to bend under such force.

European swords on the other hand aren't just hardened, they are also tempered, giving them a more springy structure. They're less hard on average but they can withstand an impact easily by being flexible.
