Im not sure if this counts but From the New World was pretty dark but never actually dwelled much on the dark parts. It is really god damn grim if you actually think about what some of the things happened off screen. Of course the off screen stuff involves rape, genocide, mind control, racism, torture and so forth so it might be stepping into the grimdark territory while only subtly hinting it happened.

Grimdark is basically when the entire world is fucked, the MC can't do shit, and dark themes are thrown about for no reason other than to make the entire world a barren wasteland where the average citizen is fucked with nothing that they can do to change it.
A good example of this is the WH40K universe, where everything is dark and edgy and the universe is slatted to die to one of dozens of doomsday scenarios.

You make an anime for children.
First you start by not killing the main cast unless 100% necessary.
Not for shock value, not because you want them dead, have their death have some value.
2nd, no extreme Controversial subjects such as Abortion or Rape, these detract from the overall subject matter of the story and start up arguments about 'IS X RIGHT OR NOT!?'
3rd. Do not do anything to children. Children do nothing wrong, they barely know anything about the cruel harshness of the world and see things more purely. No that one kid crying at the supermarket is not indicative of kids as a whole, it's indicative that Baby Boomers and Baby Boomer kids are shit at parenting.
4th, You can have bittersweet or bad endings, but never KEEP using it, you need to throw in some nice things to balance it out otherwise people are just going to feel depressed because they're reminded of how shit real life is. If your series reminds people how bad real life is than it failed
5th. Do Not do any the Above with a Clown, it does not make it funny, it makes it retarded and draws retards into defending the above things.

To be honest, Attack on titan would've been more watchable if it didn't have protagonists who could turn into titans.
Humans vs. Titans would've made each victory a lot more meaningful rather than having the MC turn into a titan and wreck people's shit.

A story can have a setting exactly like that and not be the slightest bit grimdark, it all depends on the tone. Many works of fiction take place in fucked up, apocalyptic scenarios thick with death but are presented in a more minimalistic fashion that doesn't try to shove it down your throat. Some are even outright comedy that play the bleak setting for laughs. It's all in the presentation.

Isn't that because it's not about the humans? (having not seen it) I read a short story about a Von Neuman-ing mining robot taking over a base from the humanoids controlling, but it was a 'happy' story because it was from the PoV of the robots. It's all about perspective. If the situation is literally hopeless from the perspective of the protaganists, often along with character deaths at a high rate making characters meaningless (you close off and avoid getting attached when you know their all gonna die), and constant failures, you've reached grimdark.
