These asteroids are way too fucking small for their gravity to have much of an effect on the path of the bullet. If the gravity of these asteroids is having such a huge effect on the bullets, then the mechs themselves and especually the Deucalion would be having a huge effect on the bullets.

That's what they do. The pilots are obviously just referring to it in a general way to convey that their munitions are being pulled astray by something that is the equivalent of wind to a sniper.

The writers quite obviously have science advisers on the show and no one above the age of 5 thinks there is enough atmosphere up where they are to form literal "gusts of wind".

The LIC is not nearly dense enough to effect the path of a bullet. 0.0016 atoms or whatever per cubic inch will do nothing at all to a bullet.

Solar winds will not do shit either. They're made up of photons, which will have a noticable effect on the motion of subatomic particles, not bullets, and it will especially not cause them to zigzag and curve as wildly as they have been.

Steel is the most common type of metal-core armor-piercing projectile followed by tungsten and depleted uranium.

Considering the cost, I would say they are shooting high-explosive shells with steel casing.

Although, that still does not account for the crazy stuff that is happening in the anime even with the compounded effects of all the crazy.

I think the Martians are using a form of particle beam.

Particle beams are extremely easy to divert with magnetic fields, but large hunks of steel traveling at mach velocities significantly less so.

If it were magnetic, their ships and mecha would be attracted extremely strongly to any magnetic source. By strongly I mean with crushing force.
