I think it's because Shirou works better as a character from a third person perspective instead of the first person perspective the VN was from.
He's more relateable and likeable when we're not having to sog through his unnecessarily long internal monologues and instead only see his words and actions most of the time. Makes him seem like less of an autistic dork and more like a fundamentally broken person (which is what he is, but the VN didn't do as good a job at portraying that).
And hey, the fight scenes are friggin' awesome, better than the descriptions in the VN. Good action makes most any series watchable.

I don't know about you, but having to read through Nasu's narrative (which isn't the best, mind you) and realizing the many flaws within the writing and characters doesn't make me want to finish it any sooner. I mean, I spent MONTHS trying to finish Fate because it was so fucking boring and obnoxious. UBW was slightly better only because it had better pacing, but still took me a while. HF's has taken some time because Sakura is by far the most boring heroine out of the three.
The problem with Nasu's narrative is that he tries to explains things in the most roundabout way possible to make it sound deep and complex when he could have saved a lot of trouble just going straight to the point and start exploring it from there. I'm going to have nausea if I have to YET go through pages and pages of how Shirou's guilt complex is described in 1000 different ways without ever calling it a guilt complex per se. The scene with Kirei and Saber in the church with the orphans was the best example of it.
Also for some reason Nasu thinks repeating the same word 5 times will add impact to the scene. It never worked for me.

A lot of Shirou's characterization suffers from Nasu's mediocre writing and an even more mediocre translation by Mirror Moon, especially when he's a guy who speaks with his actions, not his words.
In the show, we see his actions instead of whatever terrible logic nasu has thought up for him to take this course of action. This combined with Ufotable doing awesome action scenes makes a lot of moments way better.
I think my favorite scene so far was when Mitsuzuru asked him "Don't you ever have any fun, Shirou?"

His actions are explained through his mindset given in the VN in first person, whereas his actions in the anime are not explained in the slightest making himself look like a retard.
For example.

El-Melloi case files is "exactly the same however the thick Sanda Maokoto atmosphere makes for somewhat different, rich, magecraft things."
Then, Strange Fake is "the same conditions, the same conclusion was met, however for some reason the worlds are completely different."

I have to say, I really enjoyed both F/SN, F/HA, F/Z, CP, and a ton of other shit. Naturally I also like Tsukihime.
But holy shit is the dialogue just downright awful sometimes. All I can think about while playing Tsukihime is how much I want to rewrite it.

It's different, in HA the world itself doesn't take itself seriously and it breaks into META talk sometimes, so I wouldn't count it as a accurate depiction of reality. Plus most of the SoL scenes were made by guest authors.

It's a multiverse. Everything that happens in FSN is canon, including all the results of all your different decisions. Every time anyone makes a decision, it splits a new universe where that decision happened, and a universe where something else was decided, and all these universes are parts of Fate and canon. All routes of FSN are canon, even though they contradict each other. F/HA is canon. Zero is canon. Carnival Phantasm probably isn't canon since it's clearly a joke series from beginning to end, but fuck, it might be. Infinite multiverse.
