Some booths do for certain items. The item was tagged as 本日完売 which basically says sold out today. That either means it sold out today and is gone, or it is gone today but will be restocked at a later time. The way that these booths are run is kind of random and hectic. Some companies will only bring a specific amount for one day, and once it is gone then its gone. Others will restock the second or third day, but will only have a very small amount on hand to sell in those cases. Others seem to ration out their stock between all three days to ensure that it is available at least for part of each day.
