Not enough Akame throughout most of the show, but at least she's still alive.
They skipped a lot of the character development, the ending was a clusterfuck, the animation was almost always terrible and the only time a character got some sort of backstory was when they would die soon.

Pretty much this. The writing of the manga isn't some masterpiece sullied by anime original remixing. It's an uninspired shounen stuffed into a cookie-cutter JRPG setting with edge-fest sprinkled all over it. There's really a lot of reasons to dislike her.
The reason is that her character concept is completely retarded and that she's very out of place in the series. Esdeath is entirely unrealistic in her personality and actions-- it's basically like a character from Big Bang Theory, nothing she says or does follows any real kind of logic-- she does things because the plot demands them or because the author thinks they would be amusing for her to do.
She "loves" Tatsumi, but isn't actually wiling to have a real or meaningful conversation with him, doesn't take any actions that could possibly result in them being together, and just goes around being plot convenient. She has this whole 12-year old "LOL SOCIAL DARWINISM DA STRONG RULE DA WEAK" philosophy that she espouses, but then, when the kingdom she was fighting for is legitimately proven to be weaker and loses, she doesn't maneuver herself to be with the strong that control the weak, and instead dies in a meaningless fight with Akame. Also, about the anime in general: so much potential thrown into the dumpster.
Killing all those characters just for the sake of doing so and resembling GoT or AoT was just shit because it felt so rushed 90% of the times.
I didn't feel sad for any death except for Bulat's (mostly because he is a exact copy of Kamina), Mine's, Lubba's and a bit for Tatsumi's.
So many fucking things are left unexplained or unused, like the relationship between the 2 sisters. One time they cooperate, next time they want to murder each other for no logic reason besides choosing different paths in the past. To conclude this they make a chapter with a predictable ending that leaves you with the "is that really it?" feeling. I expected something else.
I really don't understand why they rushed it so much to make just 1 season. I would have prefered 2 seasons with a less fast paced story if exchange for more character development and quality.

The series has the problem where it's kind of hard to get attached to many of the characters because as soon as they get the character development that makes you attached to them, you know that they're going to die. In-universe, Esdeath is, probably, the character who best understood the world they live in. A country surrounded by hostile nations: savages from the swamps, barbarian jackasses, unexplored and dangerous lands, and the supposedly "better" nation is known for doing witch hunts. And this is in a world where man isn't the main predator, danger beasts are.
So, add Esdeath's background as a tribal warrior who has known firsthand the truths of the world, plus the context of an empire besieged by enemies at every cardinal point, and her position becomes very coherent and logical.
If anything, the RA and their blind idealism feels more out of place in this kind of setting.
Esdeath also represents on an individual level the contraposition between NR and the empire. The manga has a very pessimistic tone, which was best represented with Lubbock's demise (a hopeless situation in a place hyped as being synonim to death, we get a glimpse of hope, but then it's swiftly crushed, because the palace was, as expected, a very dangerous place). This pessimism of a hopeless struggle of the RA against an all-powerful empire, on an individual level, is the hopeless struggle of the protagonists against Esdeath.
The same glimpse of hope that we saw before Lubbock's death, in Esdeath's case, is her charisma, her love for Tatsumi and her motherly disposition towards subordinates, which are justified by the same tribal background: her allies are like a family, her enemies only deserve to be crushed.
Then, Takahiro plays with that "good" side of her to keep the possibility that she has a change of heart. Maybe he doesn't plan to redeem her, in fact that's the most probable outcome, but it doesn't matter. The point is creating that expectation, while at the same time reminding us of how evil she is. I think he succeeded.

There are also other small details about her: she doesn't take well to the finer arts, by her own words. She doesn't "get" art, which is a creative task, because she is destructive ("I can't be with someone who only brings destruction"). It's a nice detail about her mentality.
One of my favourite events recently was when she forced the PM to dissolve Wild Hunt. It represented that she doesn't care for the politics game, but she knows how to play it if she needs to. That political power was also hinted by her offer to cancel any charges against Tatsumi for belonging to NR. That coupled with the revelation that she didn't have the intention of killing him anyway (and therefore betraying the Empire), further fuels her impredictability.
And, honestly, just looking at the latest manga chapter, every panel with her is pure fun. That charisma doesn't come from nowhere. It's that kind of character.
By the way, I don't understand why some people think her evilness is a downside. I've never seen that kind of reasoning used against Dio, Raoh, or Griffith, for example. Many people like them despite being jackasses, tyrants or betrayers. You don't have to agree with them morally, they are fictional. Same goes for evil charismatic characters in other media (and I won't name the specific shows I'm thinking about, because I don't want to give the impression that I'm comparing them quality-wise to AgK).
This anime probably would have been a lot better if told from Akames' point of view

That's a good analysis of her character. 10/10 would read again. I wish the haters had the capability to properly convey why she is a bad character, but I guess that would be asking too much.
