The Almighty power is just a fancy way of saying "Hyper Adaptability". Essentially, since Juha Bach can distribute powers, take away powers, and understand powers, his power would be the ability to become immune to other's powers.
It's much less of an asspull and more of a built up reveal. This also explains why people like Gremmy AKA "The Visionary" just can't overthrow Juha Bach as he is immune to his powers.
The only drawback is that Juha Bach has to see, understand and feel said power happen to himself.

I think it's just that he's doing a hail mary with this assault on the soul king. We know that he basically went into a coma the last time he fought (and, didn't he say covered in darkness?) and so now he's clearly conserving his energy as much as possible, and only using enough power to deal with the opponent at hand.
It's also the reason he has amassed an army when he's so powerful.
He's slowly powering up as he gets closer and closer to his goal, where before he wasn't even willing to FIGHT.

It doesn't have to be explained by the user. Juha Bach just has to figure out said power himself. Like for example, Juha Bach didn't understand how Aizen's power worked and when he went over to talk to Aizen, Juha Bach was affected by such.
However, once Juha Bach understood what happened to him, he instantaneously was able to adapt himself with Aizen's power.
