Taisha sends Fuu and Itsuki to the city. They order her to organize the local hero candidates into a team. She's new in town, she doesn't know them, how does she do this? She asks around, finds out that Yuuna is like a minor local celebrity, always going out of her way to help people. Finds out that recently she's attached at the hip to Tougou so hey awesome, they're basically a package deal. All she has to do is get one of them and the other is guaranteed to come along. So she comes up with the idea for the Yuusha Club, maybe gets Taisha to help her get permission from the school, Itsuki follows along because of course she does. Naturally Yuuna joins right up, because how could she resist a club that's devoted to helping people, and brings Tougou right along with her. Just like that, suddenly the four of them are spending a ton of time together. Fuu has accomplished the goal she was given, now all she has to do is wait for the Vertex to show up, and if she happens to grow to like her new teammates well that's OK, she has nothing to be guilty about, she's saving the world here. It's an easy rationalization to go for, because that's how the human mind works.
Very little of that is assumption, by the way. Taisha sent her to oversee Yuuna and Tougou, she was new in town, she founded the club, Taisha refers to them as her team. Facts.

I guess my confusion is from how much they talked about human sacrifices in the last episode. It feels like things got flipped around at some point, and the sacrifice, rather than being an unfortunate consequence of saving the world, ended up becoming the reason for fighting in the first place. It's strange.

You're the moron. We already told you that this giant core appeared because they were sealing the fused Vertex. You need to go watch the episode again. What does Yuuna tells Itsuki and Karin before going with Tougou to destroy the core? She tells them to keep working on the sealing. What keeps the core out of Vertex is the sealing ritual.
Sealing is just a way to force a Vertex to expose its core without breaking through its armor. That's it. When sealing or not sealing, the only way to destroy a Vertex is to destroy its core. They do this every time.
