To be completely honest?
More original style. Visually well designed settings. Proper pacing. Less fanservice. Plots that make sense and don't rely on asspulls. Good direction cinematography, for lack of better terms. Actual characters instead of stereotypical and shallow shadows of who they could have been.

Moving away from pandering shit (loli, shota, mecha, magical girl) and focused more on being unique rather than similar drawing styles for everything, and fewer hard ons for old franchises.

There can be, and there are, that have those kinds of themes or characters central to the story.
My main gripe with things today is that other elements (like story telling or character development) get tossed out the window because its easier to make a panty shot instead.
As for old franchises, you can still take an old universe and make a cool story from it (see Gundam Seed Destiny), but there are still a fuckton of remakes or rereleases (NGE is a big culprit) of past stories with little to no innovation.
On a related note, tons of stories borrow or are heavily inspired by past series (NGE left a huge impact and you can still find plenty of 2deep4u bullshit out there because of it) but a lot of stories aren't inspired by them, they're more ripping them off. Valvrape is a good example of that.
I enjoy pandering stuff (Trinity Seven is quite enjoyable!) but the amount of stuff like it out there is terrible.
